Today, I have a delightful recipe to share with you all. It’s for a delicious dish called Pickled Green Beans. If you’re a fan of pickles and green beans, then this recipe is definitely for you!

Pickled Green Beans

To make this tangy and flavorful dish, you’ll need the following ingredients:

Ingredients:

  • 1 pound of fresh green beans
  • 2 cloves of garlic, sliced
  • 1 cup water
  • 1 cup white vinegar
  • 2 tablespoons kosher salt
  • 1 tablespoon sugar
  • 1 teaspoon dill seeds
  • 1/2 teaspoon red pepper flakes

First, trim the ends off the green beans and blanch them in boiling water for about 3 minutes. Then, transfer the beans to an ice bath to cool them down and stop the cooking process.

In a saucepan, combine the water, vinegar, salt, sugar, dill seeds, and red pepper flakes. Bring the mixture to a boil, stirring until the salt and sugar have dissolved.

Next, pack the blanched green beans and sliced garlic into sterilized jars. Pour the hot brine over the beans, leaving about a 1/2 inch of headspace. Secure the lids on the jars and allow them to cool to room temperature.

Once cooled, refrigerate the jars of pickled green beans for at least 24 hours to allow the flavors to develop. These pickles can be stored in the refrigerator for up to 2 months.

In a separate saucepan, combine the vinegar, water, salt, red pepper flakes, garlic, and sugar. Bring the mixture to a boil, stirring until the salt and sugar have dissolved.

Pack the blanched green beans and minced garlic into sterilized jars, then pour the hot brine over the beans, leaving a 1/2 inch of headspace. Seal the jars and let them cool before refrigerating.

After 24 hours, your Spicy Pickled Green Beans will be ready to enjoy!
